With Taskaree, we bring together an ensemble that could reflect the complexity with depth and conviction. 三 | 古法陶坛承技艺两次发酵定风味 踏入统一老坛酸菜发酵车间，一排排整齐排列的传统陶坛最先映入眼帘。肚大颈小的坛身带着时光沉淀的痕迹，连片铺展成规整的阵势，场面颇为震撼。在这里，每一棵酸菜的诞生，都从严苛的原料筛选开始。

四 | 统一老坛酸菜供应商工厂发酵坛房师傅周云忠，常年值守在坛房一线。说起选料标准，他如数家珍：“腌制所用的芥菜，是从数百棵里精挑细选的‘尖子生’，茎干厚实、叶片肥厚，吃起来更爽脆。”除主料外，辛辣芳香的小黄姜、皮薄肉厚的红辣椒也经层层筛选作为辅料，原料底子扎实，风味才有根基。周云忠扶着坛身继续介绍：“一层菜，一层料，腌制严格遵循古法工序，装入陶坛后密封发酵。这种不透光、导热慢的传统陶坛，能为乳酸菌营造稳定的发酵环境，是酸菜酸香纯正的关键载体。

五 | ” 俯身贴近坛沿，能清晰听到咕噜咕噜的气泡声,这是乳酸菌正在活跃“呼吸”的信号，像一场慢悠悠的“无氧运动”。“统一老坛酸菜的核心工法，在于坚持两次发酵工艺。”周云忠说，“先经八十一天以上的首轮发酵初成风味，再转入传统老坛以古法水封进行第二次发酵。

六 | 两次慢工下来，酸味醇厚，口感爽脆，才是地道老坛的水准。” 守古法亦重创新。传统工艺之上，现代技术为品质筑牢了稳定防线。“企业研发的核心发酵技术获得国家发明专利，进一步保障了风味的稳定性。

七 | ”统一老坛酸菜研发经理欧丽介绍，车间内每个陶坛都有专属 “身份证”，手工记录与数字化管理并行，每一坛酸菜的发酵进度、品质状态均有记录。

八 | 用料、配方、老坛、工法、专利五项核心环节，共同构成了完整的产品品质支撑体系。 全链品控严标准多道检测守安全 好风味的前提，是实打实的食品安全。

九 | 从原料到成品，酸菜要闯过一道道“安检关卡”，才能最终走上消费者的餐桌。原料清洗环节需执行“三清三洗”流程：先剔除老梗残叶，再依次经过三道机器清洗与三道人工清洗，逐遍净化。

十 | 在清洗流水线旁，随着清洗轮次增加，水体清澈度逐步提升，清洗合格的酸菜才可进入发酵环节。发酵完成只是开始，出厂前的“体检”更为严格。欧丽表示，酸菜包从芥菜原料到最终成品，全程要通过200余项检测检验；生产过程中还要经过巴氏杀菌、X光检测、金属检测等环节，配套十余项专项检测清单，全部合格后方可放行入库。为保障每一批次风味稳定，品控团队严格执行“一闻二看三尝四品”标准：先闻香气是否纯正，再看外观是否饱满鲜亮，三尝滋味是否酸辣鲜爽，四品口感是否脆嫩无渣。所有指标都要与标准样品、风味雷达图精准比对。目前，统一企业旗下各工厂执行同一套标准、同一把标尺，全流程管控要求一致，确保不同地区的消费者吃到品质一致的产品。 透明开放筑信任匠心传承续风味 截至 2026 年，统一老坛酸菜供应商工厂已坚持13年面向公众开放参观。将生产环节对外展示，接受公众监督，是企业对自身品质的自信体现，也是对消费者食品安全知情权的回应。在日常运营中，统一企业搭建全链条食品安全管理体系，覆盖原料供应商审核、生产过程管控、成品检验放行多环节。
